Kapiti Island Today 29/12/12


6.20pm ...

 
 
It's been a while, I won't bore you with why but I am starting some new year resolutions early!
 
Still sweaty weather here but no sun and rain threatening each day! Big change from last week when the sun was shining and it was HOT, HOT, HOT! Even by kiwi standards!!!! Spare a thought for us Scottish folk!

Kapiti Island Today 1st November 2012


Kapiti Island today 6.05pm ...





We took a trip to a different part of the coast today. We are lucky enough to be 10 minutes away from the AWESOME Queen Elizabeth park. It's a pretty cool wee (big) national park with loads of different tracks (inland and coastal) for dog walking, biking, running and even horse riding.



It was another beautiful and even hot day today although this picture says otherwise! Would you believe behind the camera there was beautiful blue sky. I found it quite warm on the first half of the walk on the inland track but as we walked back along the actual beach it was a bit chilly alright!



Island fact for the day - Kapiti is currently a bird sanctuary and it has no pests.

Meal Planning Monday 20th August 2012



Sunday - Busy afternoon planned so easy peasy pasta with garlic and pesto sauce, mushrooms and bacon.

Monday - My Mummmys Chicken Curry, check out my blog post for the recipe.

Tuesday - I'm working and Lovely Hubby is Cherubsitting. Seeing as I'll just have myself to get ready I'm going to do a beef stroganoff in the crockpot. I'll put it all together before work and it'll be ready when I get home. Means I can think up another job or ten for Lovely Hubby to tackle instead of dinner!

Wednesday - Lentil Dahl.

Thursday - Grilled chicken, roast potatoes (in our magic potato roasting machine) and curried mushrooms. the curried mushrooms are Lovely Hubbies speciality so seeing as I'm working today he can do dinner!

Friday - Pasta, probably be the same mix as Sunday

Saturday - We're really enjoying our grilled pesto chicken so I'll make this tonight and serve with potatoes and veg.

Chicken Curry Recipe...Warning it's Hot Hot Hot!

Instead of posting inane jibbering and/or pictures I thought I would attempt a useful blog post today.
As mentioned in my Monday Meal Planner I made My Mums awesome Chicken Curry last week. My mum has been making it for as long as I can remember. She got the recipe from an old friend and neighbor. It has probably evolved quite considerably since she first started making it 30ish years ago! Funny if Darling Daughter and Second Born Son were both making it still 30 years from now!!
Now I will warn you we are a family who like our spicy food. My grandad would put brown sauce on everything my granny made him. In true grandad style but with a modern twist we add jalapeƱos, cayenne pepper or kataya sauce to everything.
If you choose to have a go at this curry be aware it will make
  • Your nose run
  • Your eyes sweat
  • And most of all your bum burn!!!!!
