Meal Planning Monday 4/2/13





On the menu at the Simpson Residence this week;


  • Take away (choice of pizza, fish and chips or thai). (NAUGHTY but it's in aid of my stepdads last night in N.Z).
  • My sister will cook one night.
  • Mum's chicken curry.
  • Pasta, bacon, courgette (baked potato for mum, she doesn't like pasta (crazy)).
  • Steak, baked potato and corn on the cob
  • Breaded pork, with potatoes and curried mushroom.


One meal short but we'll worry about that when we get to it! Linking up to At Home a with Mrs M ...

Meal Planning Monday 28/1/13






A difficult meal planning week ahead! My Mum and Stepdad arrive for a holiday (*whoops with delight inside*). Lovely Hubby, Lil' Sis' and I are all on holiday for a week for the occasion (it's been a year since we last saw them!). The weather looks like it is going to be amazing! (Fingers crossed the awesome weather will tempt them further to retire here!). If the weather is as its meant to be the barbecue will have a good innings this week!

So what I'm trying to say is we have no official meal plan but I think this weeks eating will involve some of the following ...

  • Chicken kebabs and rice. We'll pop some peppers, mushrooms, courgettes and cherry tomatoes on the skewers along with the chicken.
  • Sausages and salad.
  • Steak, baked potato and corn on the cob.
  • Lentil Dahl with rice.

I won't plan any further. That's a good start. The folks might have their own ideas and we may eat out a couple of nights!

Meal Planning Monday 21/1/13



Short week for us this week! I'm off galavanting with The Cherubs at the weekend! We're off up to Auckland to see some chums! Lovely Hubby will have to sort himself out at the weekend!


  • Sunday we had pasta, mushroom, courgette, bacon and creamy pesto and garlic sauce.
  • I'll make a big chilli batch on Monday. Hopefully it will last us 2+ nights. It's been a while but I've got a hankering for it! Mon Monday we will have it with tacos.
  • Tuesday Lil' Sis' will cook!
  • Wednesday, chilli and a baked potato.
  • Thursday, burgers on the barbecue.
  • Friday and Saturday, Lovely Hubbies choice!


FYI our adventurous menu last week was relatively successful the macaroni muffins have potential.(I made a few mistakes. Blog post to follow), slow cooked balsamic chicken was yum (we served it with tatties and brocolli not pasta as the recipe suggested) and I liked the cheesy courgette quinoa, Lovely Hubby is not so sure but will try it again!

Meal Planning Monday 26th November 2012






I got Lovely Hubby to plan the meals this week! Not sure how, at brunch on Sunday I asked home what he wanted and he managed to fill the week. Normally he puts it back to me but he must have been inspired this week (ha! Maybe not when you see what we're having).

In no particular order this week we will be having;

  • Pasta, sauce, bacon and asparagus
  • Steak, baked tattie and corn on the cob (I think we have spare asparagus so we will have that too)
  • Lil' Sis is doing Fajitas for us one night
  • Chicken Supreme (mummy's recipe), roast tatties in our magic roast tattie machine and brocolli
  • Cheese toasty and soup
  • Lentil Dahl
  • We have prawns in the freezer, some noodles and all sorts stock ingredients for noodely prawn dishes so between us we will rustle something Asian inspired up

#Meal Planning Monday 19th November 2012




I'm not feeling very inspired this week. This may reflect in my menu!
On the menu in The Simpson house this week in no particular order;
  • Steak, baked potato and corn on the cob. We had this week, we all enjoyed it so much we decided to make it a weekly staple until we get bored of it! Although Lil' Sis' and Lovely Hubby said they would rather just have salad instead of baked potatoes! Crispy water ain't enough for me I'm afraid!
  • Mums Chicken Curry. It's my late finish week this week so I made this on Sunday and popped it in the freezer ready to haul out when we fancy it! Clicks here for the recipe.
  • Old faithful pasta, pesto and garlic sauce and veg (maybe asparagus if its in supermarket).
  • Cheese Toasties, we never got round to having this last week.
  • Homemade KFC style wraps, see what I mean here. We were meant to have these last week too but the risotto on last weeks plan lasted two nights and on Saturday we had Thai takeaway.
You may notice 5 meals where there should be 7! I am so uninspired I can't even manage 7 meals! BUT we will not starve! I just remembered we are going out for dinner on Wednesday and Lil' Sis' is rustling something up for us on Monday night!

Maybe I will get inspiration from some other blog meal plans.

Meal Planning Monday 12th November 2012



This week I am on the early finishes at work so there isn't such a stress to be super organised but I've still tried to pick simple and hopefully a little healthy.

Dusting of a few old faithfuls this week. Two in fact, both of which are Lovely Hubby specials. He is an awesome cook but not the healthiest cook! Will need to up the exercise this week to balance it out!

Again I've not really planned what days we are having what but one way or another we will be eating ...

  • spicy butternut squash (pumpkin in our case) soup from last weeks Meal Plan. We didn't get round to having this as the Chick Peaans Butternut Squash (pumpkin in our case) lasted two nights.
  • fillet steak, baked potato and corn on the cob. Expiry date dependent if there is a nice night this week this could be a barbecue meal! The forecast is not promising though
  • Old faithful no. 1; Home made KFC style wraps. Lovely Hubby invented this when he was living here on his own. Clever boy! Some frozen breaded chicken chopped in a wrap, garnished with tomatoes, cucumber, cheese, jalapeƱos, sour cream, salsa and/or anything else you fancy. Yummers. I made him make this so many times when I moved over that he got sick of it but I wreckon it's been a year!
  • Garlic prawns with jasmine rice and brocolli. The other week when we had spicy prawns I had baked potato with it and lovely hubby had rice. Whatta mistaka to maka! He par boiled the brocolli then fried it off in sesame oil. He then popped the cooked rice in with the brocolli and added a spot or three of sweet chilli sauce. Jealous!!!! So this is what we will be having with our prawns.
  • Lentil Dahl. Easy, simple and healthy.
  • Old faithful no.2; mushroom risotto. Lovely Hubby invented this after the first series of Hells Kitchen with Gordon Ramsay. They made mushroom risotto on the show, I expressed an interest in the dish and Lovely hubby went to work and came up with my fave dish! One of the courses in my last supper menu! Risotto rice, porcini mushrooms, asparagus, bacon, rocket, Parmesan, butter, wine put together in only a way Lovely Hubby knows how!
  • Cheese Toasties.

Meal Planning Monday 5th November 2012


    This week we will be having, in no particular order;


I did have planned what days we were eating what, slow cooker things for days I was working etc. BUT our supermarket didn't have any butternut squash so my meal order was foiled! It looks like I may have to substitute the squash for pumpkin but my cooking crapness means I am worrying probably unnecessarily about wether or not this will be ok and if I will be able to cut a pumpkin up or not!!!!

Meal Planning Monday 27th August 2012



Some weeks meal planning is really simple but I stupidly asked for input form Lovely Hubby and Lil' Sis. I wish I hadn't! Lil' Sis just wanted the same things as last week! And everything I mentioned Lovely Hubby stuck his nose up. So I went in a strop and rather childishly proclaimed 'f@&k you both you can do the fecking meal planning'. Needless to say they didn't so I did it myself and didn't ask for their input. They'll eat what they are given!

Maaaaan I sound like my mother ha ha ha!



I am increasing my work load as of this week so I have tried to keep things as simple as possible! Things might get a bit repetitive but needs must!




Sunday - We spent the day in Wellington so we treated ourselves and The Cherubs to dinner out. We went to a cute little pizza place called One Red Dog. It was great. We don't go out much so I was nervous about asking them to heat Archie's milk and purĆ©e but they were so cool about it. I just remember when I asked in the U.K for people to do the same for Maisie some people were so awkward about it. As well as great service the food was great.  I had mussels to start and calzone for main. Yum yum!



Monday - Thai Green Prawn Curry with rice and broccoli. First day working in a new place and working till 6pm so need it to be simple.



Tuesday - Grilled chicken, roast potatoes and curried mushrooms. I know we had that last week but it is so good and easy. And we all love it.



Wednesday - Sweet Potato Curry. A veggie curry my chum from Mummysknee blogged about as a guest blog for At Home With Mrs M? It looks like just my cup of tea or perhaps I should say just my bowl of curry! I do however think I will need to add some kind of meat to keep Lovely Hubby happy.



Thursday - Good old meal planning regular ... pasta with creamy garlic and pesto sauce, bacon and some kind of veg.



Friday - Not sure about today, will rustle something up with what we have.



Saturday - Cherry Tomato Pasta, a Gino D'Acampo recipe I believe. It's been a while since we have had it but I'll give it a whirl.

Meal Planning Monday 20th August 2012



Sunday - Busy afternoon planned so easy peasy pasta with garlic and pesto sauce, mushrooms and bacon.

Monday - My Mummmys Chicken Curry, check out my blog post for the recipe.

Tuesday - I'm working and Lovely Hubby is Cherubsitting. Seeing as I'll just have myself to get ready I'm going to do a beef stroganoff in the crockpot. I'll put it all together before work and it'll be ready when I get home. Means I can think up another job or ten for Lovely Hubby to tackle instead of dinner!

Wednesday - Lentil Dahl.

Thursday - Grilled chicken, roast potatoes (in our magic potato roasting machine) and curried mushrooms. the curried mushrooms are Lovely Hubbies speciality so seeing as I'm working today he can do dinner!

Friday - Pasta, probably be the same mix as Sunday

Saturday - We're really enjoying our grilled pesto chicken so I'll make this tonight and serve with potatoes and veg.

Meal Planning Monday 13th August 2012



The plan this week is a wee bit like last week. I hate planning and writing the shopping list so I made Lovely Hubby do it this week ...
Sunday - Last night we had some yummy spicy prawns, stir fry veg, curried mushrooms and rice. Odd mix but yummy.
Monday - Pasta with mushrooms, bacon and creamy garlic and pesto sauce.
Tuesday - Grilled chicken with pesto, roast potatoes and some kind of veg. We had this last week and it was pretty tasty.
Wednesday - I made this chilli recipe last week. It's from the Food in a Minute Website. It was really tasy. I've got mince in the freezer so we'll have this again. I'll do it in the slow cooker and serve with baked tatties. Usually the chilli I make has peppers/capsicums in it to bulk it out but this recipe doesn't have them in it. Just as well really because in the winter here the price rockets ...

Thursday - I'm working today so we'll have pasta for tea tonight. Nice and easy!
Friday - Beans on toast!
Saturday - Grilled chicken with chickpea curry. It's meant to be a vegetarian dish of just the chickpea curry but Lovely Hubby gets a bit nervous if there is no meat on the plate! The chickpea curry is so simple, the recipe is on the Countdown website.

Last Weeks Meal Plan In Pictures

Here we have it. Last weeks Meal Planning Monday 7th August 2012 in pictures ...
I seem to have developed a bloggers obsession with taking pictures of everything just in case I want to blog about it! I thought I best put these food ones to good use. We had what can only be described as a 'Fancy' food week so I couldn't help myself but picture what I made.
You may note there are only 5 meals and yep siree bob there are 7 days in the week. If you noted this then you are what my Motber Dear would call a 'nit picker'!
You may also note if you are a die hard Notsosuperscottishmummy fan (yeah ok I'm pushing it with that idea but you never know) that the meals may not be exactly what I said they would be BUT again if that's the case then you are a 'nit picking menace'.

Meal Planning Monday 7th August 2012



Sunday - Steak Sarnie a la Jamie Oliver's 30 minute meals cook book. Sunday has been and gone, we had it and it was awesome. I don't do the full meal from the cook book just the sandwich and a salad from the same book but different meal. I can't remember the name of it (and I am too lazy to get up off my butt and find it) bu it consists of spinach, sundries tomatoes, pine nuts, cucumber, oil, balsamic vinegar and lemon juice. It's yummers.
Monday - Prawns done with some curry paste, rice and some broccoli on the side. Last time I had this kind off thing I just used a jar of paste this time I am using Mummysknees recipe (cheers chum).
Tuesday - Grilled chicken with pesto, roast potatoes, carrot mash and some broccoli on the side.
Wednesday - I'm going to try a new chilli recipe. It's from the Food in a Minute Website. It can be done in the slow cooker so I'll try doing it that way.
Thursday - I'm working today so we'll have pasta for tea tonight. Nice and easy!
Friday - All going well I will be out for dinner on Friday so Lovely Hubby will have cheese toasties or gets pizza or something.
Saturday - Grilled chicken with chickpea curry. It's meant to be a vegetarian dish of just the chickpea curry but Lovely Hubby gets a bit nervous if there is no meat on the plate! The chickpea curry is so simple, the recipe is on the Countdown website.

Meal Planning Monday 25th June 2012

In case anybody is interested here's what The Simpson Clan are eating this week...

Monday - Popeye pasta, this was on last weeks plan but we never got round to having it.

Tuesday - Grilled chicken (I'll need to brace myself for the mess, I've recently rediscovered my George Foreman grill, it makes yummy chook, but it's messy), roast potatoes (more gadgets, I'll use my actifry to do this), accompanied by curried mushrooms. Lovely Hubby will have to make the mushrooms, these are one of his creations. I'll get him to show me how and I will blog it later.

Wednesday - Pasta with creamy garlic and pesto sauce (out of a packet but yummy), with crispy bacon and some grilled courgettes/zucchinis. I'm working all day so nice and easy.

Thursday - Chilli with tacos. I'll make a big batch earlier in the week and freeze portions for future use. Tis used to be Lovely Hubbys speciality but I took over not long after Darling Daughter came along. I love chilli. We have it with tacos, baked potato or nachos. Topped of with cheese, sour cream and of course, the Simpson staple, jalepenos

Friday - Chicken in a bag. We had this last week and Darling Daughter ate with us and she loved it. I'm making it later in the week so that I can use up the veg I have left over after making mush for Second Born Son. There is a specific list of veg your meant to put in the bag but I don't stick to it. I aim to put in potatoes, leek, sweet potato/kumara, butternut squash and carrot.

Saturday - Lentil Dahl. May make something else depending what's kicking around the cupboards but if I'm stuck I always have what's needed for this.
